Organ Meat (Simple Recipe Included)

I always encourage the consumption of organ meat, or whatever is not lean meat:
  • liver
  • heart
  • brain (I find this to be the most satisfying)
  • bones (in the form of broth)
  • bone marrow
  • kidney
  • stomach
  • skin
  • tendons (rich in collagen for joint health)
The whole animal should be eaten, as reported by Weston Price in Nutrition and Physical Degeneration. In ancient times, no animal parts went to waste. Everything was eaten.

If someone is not used to consume these parts, I highly recommend they include shellfish (mussels, oysters, etc.) in their diet if they are not allergic to seafood.

My lunch today was chicken liver and heart stir-fried in lard with vegetables:


Ingredients:

  • chicken liver and heart
  • lard for cooking
  • cabbage
  • fresh turmeric
  • salt and pepper
  • fresh red onion

Just stir-fry everything (except onion) in lard. Add the onion when serving.
